Celebrate Mexico's Independence with Chef Maria Amalia Garza from The Cultural Kitchen in this hands-on class. The patriotic menu features Chile de Uña (tomatillo chipotle relish), Queso con Tomate al Tequila (gooey melted cheese with tomatoes, onions and tequila), Tinga Poblana (spicy shredded chicken Puebla style), Frijoles Veracruzanos (refried beans, Veracruz style) and Mangos Flameados al Tequila (tequila flambeed mangos over ice cream).

There is nothing as delectable as fresh hand-rolled pasta. In this hands-on class Chef Cindy Tofanello from Algonquin College will show you many ways to make fresh pasta with 3 different sauces. You will also try your hand at making cheese tortellini, and for the main event, her favourite pasta recipe: freshly made Fazzoletti, stuffed with cheese and caramelized onions served with salsa di pomodoro (tomato sauce).

A Locavore goes Italian

Slow Food enhances the pure taste of the local harvest with traditional Italian flavours. Join Peggy Hall from Slow Food Ottawa-Gatineau in this hands-on class to make this delicious Italian menu: crostini, 2 ways: garlic rubbed crostini topped with salsa alla crudaiola (cherry tomatoes and basil), and sage and walnut pesto topped with Parmigiano-Reggiano curls, fresh tomato consommé with Montreal melon balls, rainbow chard and salumi slivers, farfalle with veal and Roma tomato sauce, grilled pepper salad with greens and herb marinated bocconcini, and semifreddo with Barbera poached pears.

Learn these recipes created by Teri in this hands-on class: mango salad with toasted cashews and cilantro, Thai lemongrass and coconut soup with cilantro frisee, green curry Thai shrimp (served with kaffir scented jasmine rice), garlic and sesame sautéed greens, and coconut and sesame-kissed bronzed pineapple with cashew crème lemongrass-ginger infused tisane.

Dia de los Muertos en DiVino

Have you ever wondered what is so special about Mexico's Day of the Dead celebration? Chef Maria Amalia Garza from The Cultural Kitchen will be explaining this centuries-old tradition in this hands-on class. You will be making some of the most typical dishes served for Dia de los Muertos: queso fundido con chile asado (broiled cheese with roasted peppers), sopa de hongos con chile cascabel (mushroom soup with cascabel chile), pipian rojo de pollo (chicken with red chile and sesame seed sauce), and arroz con hierbas (white rice with herbs). Chef Maria Amalia will make her Pan de Muertos (day of the dead bread) for you to sample.

Oriental Night at DiVino

Explore & enjoy oriental night dishes with Chef Thuy Nguyen in this hands-on cooking class. Book your own private Italian theme dinner!

For your wedding or corporate retreat, choose to host a unique educational dinner focused on the wine, food and culture of Italy.

The following PACKAGES ARE CURRENTLY OFFERED in OTTAWA:
A) TUS08 - Wine, food, and architecture of Tuscany
B) VEN08 - Venice, Verona, and Amarone wine: a blend of love, art, and taste
C) SIC08 - The upcoming Sicily: where the New World meets the Old World
D) LAZ08 - La cucina de' Roma: an evening of wine and cuisine from Rome and the Lazio region

We will design and cater for you and your guests a package that includes:
- a full meal comprised of several traditional dishes -- Ingredients are researched by our chefs and bought fresh from local markets, as well as imported from Italy. At each event, chefs will briefly describe the food and the ingredients used;
- a taste of several wines chosen to match the menu items -- A Sommelier will describe the wines, their grapes, vinification methods, and the reasons for the different food pairings;
- a short lecture on the food and culture of the featured region and its ancient traditions.

Prices vary based on the number of attendees, starting from $45 per person.
